Hand-built in New Hampshire, the Univex DOME55GV pairs old-world firebrick craftsmanship with modern gas efficiency. Its 55 ⅛-inch stone hearth and 97,500 BTU burner turn out authentic, blistered-crust pizzas while the heavily insulated dome keeps the exterior cool to the touch, perfect for open-kitchen theatre and high-volume service alike.

Installation & clearance requirements
  • Minimum clearance from combustibles: 6" (15.2 cm) sides/back, 16" (40.6 cm) top.
  • Set on a non-combustible floor with at least 32" (81.3 cm) around the oven and 40" (101.6 cm) in front.
  • Provide 31 in² (200 cm²) of open area beneath the stand for combustion air.
  • Recommended dedicated natural-draft flue; exhaust fan, if mandated, must not exceed 300 CFM.
  • Leave sufficient access on all sides for routine service.
